Step 1

Heat 1 tsp of oil over medium heat in a large skillet and sauté onion and garlic.

Reduce heat to low and add spinach. Cook on low until limp, stirring frequently.

Remove from heat and add the roasted tomatoes, salt, and feta. Mix well and set aside

Step 4

Put two tablespoons of the filling in the center of each of the discos. Fold the ends together and seal edges.

Step 5

Heat a dutch oven 1/3 full of oil over medium-low heat.

Step 6

Fry the empanadas until they are golden brown.

Step 7

Remove from oil and drain on paper towels.

Step 8

Serve warm.
