"Mix the dry ingredients for the bread dough, then mix in the oil and yoghurt. Add enough warm water to make a soft and slightly sticky dough, just sticking to the bottom of the mixer bowl. Exactly how much water you need depends very much on the flour you are using hence I give no volume. Mix or knead the dough for 5 minutes. Cover the dough loosely with plastic wrap or a clean tea towel and leave to rise in a warm place for 1.5 to 2 hours until it has at least doubled in volume.When the dough has risen turn an oven on to 250 degC to heat up. Peel and chop the onion and garlic and sauté them in a frypan till soft using the olive oil. Add the chilli and frozen spinach and stir till thawed and warmed through. Add the feta cheese and mix, turning off the heat.Knead and divide the bread dough into 8 pieces. Roll each piece into an oval shape and put 1/8th of the filling in a line along the middle, leaving 1.5cm at each end. Bring the edges up and pinch them together to make a pastie-style closed piece. Oil a baking tray and cook them in the hot oven for about 15 minutes or until brown.Serve with lemon wedges."
