Preparation Warm the corn tortillas in the microwave until soft. Meanwhile take remaining ingredients and place in the food processor. Blend until slightly chunky and start spooning into the tortillas. Add the enchilada sauce and top with some extra cheese if you so desire. I also top with olives if I have them around.
