While quinoa is cooking, melt coconut oil in a large skillet over medium heat. Add spinach and cook for 2-3 minutes or until wilted. Remove and place on a separate plate .

To make the dressing, combine the vinegar, olive oil, garlic powder, Italian seasoning, soy sauce, blended prunes, and pepper together.
