Step 1

Place potatoes in a shallow microwavesafe dish. Drizzle with 1 tablespoon water. Cover with a lid or plastic wrap. Microwave on HIGH (100%) power for 3 minutes or until just tender. Cover with foil. Set aside.

Step 2

Heat oil in a heavy-based frying pan over medium-high heat. Season both sides of steak with salt and pepper. Cook for 2 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil.

Step 3

Add peppercorns to pan. Reduce heat to medium. Cook, stirring, for 1 minute. Stir in cream. Simmer for 2 minutes or until sauce thickens.

Step 4

Place beans in a small freezer bag. Twist top to secure. Microwave on HIGH (100%) power for 1 to 2 minutes or until just tender. Untwist bag. Add spinach. Set aside for 1 minute.

Step 5

Place steak on a plate. Spoon over pepper sauce. Serve with vegetables.
