Step 1

Melt 2 Tbsp butter in a skillet over medium heat. Add spinach and sauté till wilted.. Remove to a plate or bowl. (If using frozen spinach, simply thaw in the microwave).

Step 2

Melt the remaining butter in the same pan. Add garlic and cook for a minute or two, till it becomes fragrant.

Step 3

Stir in flour to create a smooth roux.

Step 4

Gradually add milk, stirring continuously to avoid lumps.

Step 5

Mix in parmesan cheese. Once melted, stir in spinach. Taste and adjust for salt and pepper.
