Step 1
Pre-heat the oven to 150°C / 300°F (fan-forced).

Mix the ginger, garlic, oil, salt and pepper together in a small bowl. Rub the paste over the ribs and place them in a baking dish with ¼ cup water in the base. Cover tightly with foil and bake for 3 ½ - 4 hours.
Step 3
Remove from the oven and uncover.
Step 4
In a small pot combine all the ingredients for sticky sauce and bring to a rapid simmer and reduce by a third so it thickens. This will take about 10-15 minutes, make sure you are patient enough to let it thicken well.
Step 5
Pre-heat the grill to high. Baste the ribs with the sticky sauce and grill for 10 minutes or until sizzling on top.
Step 6
With a slaw or salad.
Step 7
Cook the ribs and make the sauce ahead. Baste and grill to serve.
Step 8
Or reheat covered in a low oven.
Step 9
In an airtight container in the fridge.
Step 10
Some ovens with a separate grill can have the grill tray removed out the runners, with the grill tray fitting into the oven racks. You can cook your ribs in the grill tray, then transfer to grill to finish- easy and convenient!
