Step 1
In a large mixing bowl, add thawed, undrained frozen strawberries. Crush a few of the strawberries with a fork.
Step 2
In the bowl of a stand mixer, add the strawberries, eggs, and oil. Mix until combined.
Step 3
In a separate mixing bowl, add 2 1/2 cups of the flour, baking soda, salt, cinnamon, and sugar. Stir to combine.
Step 4
Add the dry ingredients into the strawberry mixer. Mix until it it combined.
Step 5
In a separate small bowl, mix the pecans with the remaining 1/2 cup flour. Add it to the batter and stir until combined.
Step 6
Pour the mixture into two greased 9 x 5 inch loan pans.
Step 7
Bake for 50 to 60 minutes, or until the strawberry bread tests done when a toothpick is inserted into the center comes out clean.
Step 8
Remove the strawberry bread from the oven. Allow to cool about 5 minutes. De-pan onto a cooling rack.
Step 9
When the bread is cool, drizzle with your choice of glaze or sprinkle with powdered sugar.
