Step 1
First, make the strawberry chamomile syrup by adding the water, sugar, and chopped strawberries to a saucepan. Stir together and cook over medium heat until the sugar has dissolved and the strawberries are soft.
Step 2
Remove the pan from the heat and use a muddler to break down the strawberries so they release their juices and the liquid turns pink. Then, add in the chamomile tea bag and let it steep in the hot syrup for 3-5 minutes.
Step 3
Once the syrup has cooled, fill a large cocktail shaker to the brim with ice. Then, pour in ¾ of the strawberry chamomile syrup, 2-3 oz gin, and 1 Tablespoon lemon juice.
Step 4
Vigorously shake until the glass is frosted. Then strain the cocktail into 2 Coupe glasses. Garnish with fresh strawberries or chamomile flowers and enjoy!
