Step 1
Preheat your oven to 350°F and grease a mini muffin tin
Step 2
Prepare your dry ingredients. In a bowl, add all purpose flour, glutinous rice flour, baking powder, and salt. Mix together and then set aside.
Step 3
Prepare your wet ingredients. In a separate bowl, mix together the egg and brown sugar. Add the unsalted butter, vanilla extract, and milk and mix until combined.
Step 4
Add the dry ingredients to the wet ingredients and mix until combined. Fold in the diced strawberries. The batter should be fairly thin. If desired, add a drop of red or pink food coloring.
Step 5
Fill your muffin tin and place in the middle rack of the oven. Bake for 15 - 17 minutes until a toothpick comes out clean. Remove from the tin and enjoy!
