Ingredients: 5 cups sliced fresh or frozen rhubarb, thawed and drained; 1 package (6 ounces) strawberry gelatin; 1/2 cup sugar; 2 cups miniature marshmallows; 1 package white or yellow cake mix (regular size); Whipped topping, optional

I prepare this colorful dessert quite often in the late spring or summer when fresh rhubarb is abundant. I make this rhubarb cake with cake mix and take it to church potlucks. People actually line up for a piece. —Bonnie Krogman, Thompson Falls, Montana

Strawberry-Rhubarb Upside-Down Cake

Whipped topping, optional

Place rhubarb in a greased 13x9-in. baking pan. Sprinkle with the gelatin, sugar and marshmallows. Prepare cake mix according to package directions; pour batter over marshmallows.

Bake at 350&deg; until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool for 10 minutes; invert cake onto a serving plate. Serve with whipped topping if desired.

This us one of my family's favorite cakes! It's also so pretty and festive for 4th of July or Christmastime.

<p>We were so looking forward to making this recipe.  It was so simple & straight forward that we thought it was sure to be a winner.  Sadly, after baking for 45 minutes the cake was still very raw in the middle and probably would have taken quite a bit longer to bake through.  The outer 1 1/2 inch was baked through, so we were able to taste what it should have been like.  The flavor was great!  I was apprehensive to even post this comment, but before baking I checked the reviews, which everyone overwhelming raved about.  I just thought others should be aware that you may have to bake it quite a bit longer than indicated and plan accordingly.  Too bad we had to toss this potentially really good cake.</p>

easy to make and was a beautiful red color when done.  Very moist and rhubarb was not overpowering.  All my "tasters" loved it.  Will definitely make again!

Great cake to serve for friends and family.  I made it for large crowds for a pot luck and it was the first thing to go.  Hint with the cake mix, If you use a box mix supliment the oil with apple sause. It makes the cake moist and better for ya.

This recipe was easy to make and absolutely delicious. I added fresh chopped strawberries with the rhubarb. Soooo yummy

I made this recipe years ago after finding it in Quick Cooking. It was a favorite, but I lost the recipe. We ended up with some fresh rhubarb and my daughter asked me to make this recipe. I went to Taste of Home and did a search and found it right away! I made the cake today and everyone is thrilled. The house smelled yummy while it was cooking! This recipe is so easy and so, so, very good!

My husband does not care for Rhubarb, but this was one way he would eat it!  Easy and uses pantry staples!  Very tasty and refreshing!

My husband love strawberry rhubarb pie, its his favorite thing ever.  When I saw this recipe I knew I had to try it.  It was so easy to prepared and was so delicious.  I cute the recipe in half and then was sorry there wasn't more cake!!! I didn't use a box mix though, I made half a recipe for white cake (I used a taste of home recipe, fruit filled white cake, it was GOOD)

This has become a family favorite here. It is so easy to make and quickly dissappears in our house.  Our rhubarb thrives all summer long and I used to just let it go after a few cuttings.  I now make this cake several times through out the summer now and it never goes to waste.

I make this cake several times a summer, especially when there's fresh rhubarb available.  It works well with frozen too, but fresh is always better.  I get a lot of compliments on it and even people who say they don't like rhubarb tell me how much they like it.

This recipe is a family favorite!  It is quick and easy to make and it looks really pretty when served.  I found that I like the results best when I use fresh rhubarb instead of frozen.
