Assemble all of the ingredients for the salad on individual plates and add a few small pieces of goat cheese sprinkled over the top.
Step 2
Whisk all ingredients together until smooth in a small glass bowl or just shake them together well in a mason jar. Any leftover dressing will keep , covered, in the fridge for a week.
