Step 1

Heat up pan with the oil. Season chicken and coat with a sprinkle of curry powder. Add to pan and fry until a nice colour. Remove from pan.

Step 2

Add chopped onions, peppers, garlic, lemongrass, ginger and chilli to the pan and sweat on a low heat for about 5 mins. Add the chicken back to the pan.

Step 3

Add the rest of the ingredients and bring up to boil. Then reduce to a low simmer.

Step 4

Simmer gentle for anything from 30 mins upto 2 hours. Add more water if required but you want a curry like consistency. Remove then serve.
