Step 1
Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9x9-inch baking pan.

In a medium saucepan melt 1 TBSP butter with 2 TBSP brown sugar and the diced apples. Let cook down over medium heat until apples are soft.

In a medium bowl, whisk the flour, baking powder, apple pie spice, and salt together.
Step 4
In the bowl of an electric mixer fitted with the paddle attachment, beat the 14 TBSP butter and brown sugar on medium speed until completely combined. Scrape down the bowl, add the eggs and vanilla, and beat until combined.
Step 5
Add the flour mixture in two batches until just combined.
Step 6
Fold in the apple mixture and evenly distribute.
Step 7
The mixture will be thick. Turn out half mixture out into the prepared pan and use an offset spatula to spread it evenly.
Step 8
Top with cinnamon rolls. My kind had 8 cinnamon rolls. So I did 2 rows of three and one of 2.
Step 9
Top with the remaining blondie batter. Do your best to spread evenly on top.

Bake in the center of the oven for 30-35 minutes, or until a toothpick inserted into the center of the blondie comes out clean.

Transfer to a wire rack and let cool for 20 minutes.
