On a parchment paper lined baking tray, make the acorn squash halves face down at 400°F for 30 minutes

Step 2

Meanwhile, chop the apple and brat finely, then mix with the quinoa.

Step 3

When the acorn squash is just soft, remove from oven, turn over and fill the cavity with the quinoa mixture. Continue baking for 15 minutes.
