Heat oven to 400°. Wash peppers. Cut top of each pepper (where stem is) partially off, then cut lengthwise down center of pepper to bottom tip. Gently open like a book and remove seeds and ribs. Combine remaining ingredients in a large bowl using an electric mixer. Fill each pepper with cheese mixture. Coat a baking sheet with oil. Place peppers in pan and bake until browned, 8–10 minutes.
