Select sage leaves that are as similar in size as possible.

Heat the oil in a large pan to 350°F.

Beat the eggs in a shallow bowl. Place flour in a second shallow bowl, and the bread crumbs in a third bowl.
Step 4
Mix the fresh cheese with the grated pecorino cheese, some freshly ground pepper and a few chopped chives. Place the mixture in a pastry bag and squeeze it onto half of the sage leaves. Place the remaining leaves on top to create parcels. Pass each parcel in the flour, the beaten eggs and the bread crumbs; then again in the eggs and bread crumbs.
Step 5
Fry a few of the parcels at a time in very hot oil until they are golden. Drain on paper towels, sprinkle with salt and serve immediately.
