Step 1

Preheat the oven to 350 degrees Fahrenheit. Line cookie sheets with parchment paper or silicone mat.

Step 2

In a bowl, sift together the flour, baking soda, and salt. Set aside.

Step 3

In a large bowl, add the softened butter, granulated sugar, and light brown sugar. Beat with an electric mixer at medium speed for 4-8 minutes, or until light and fluffy.

Step 4

Beat in the egg and vanilla extract until well-combined.

Step 5

Pour the flour mixture into the butter-sugar mixture. Beat at medium speed for 1 minute, or until blended and no streaks of flour remain.

Step 6

Add the macadamia nuts and white chocolate chips. Gently mix them in with a rubber spatula.

Step 7

Using 2 spoons or a cookie scoop, form the cookie dough into 15 to 20 balls. Arrange them on the prepared cookie sheets, allotting 1-2 inches of space in between.

Step 8

Bake for 10 minutes, or until brown around the edges. The centers will still be very soft.

Step 9

Let the cookies cool on the sheets for 15 minutes. Serve and enjoy!
