Step 1
Preheat oven to 350˚ F. Line a cookie sheet with parchment paper or a silicone mat.
Step 2
In a medium bowl combine sugar, butter, and vanilla. It’s best to use an electric mixer, but you can stir by hand.
Step 3
Add flour and mix until well blended.
Step 4
Use a cookie scoop or tablespoon to scoop the dough. Roll each scoop of dough into balls.
Step 5
If you want the cookies to have additional sugar, put it in a small bowl and roll the dough balls in it.
Step 6
Place the balls of sugared dough on the lined cookie sheet. Gently press down on each ball with the back of a spoon or the bottom of a cup to slightly flatten them. Don’t make them too flat because they’ll spread a little as they cook.
Step 7
Bake for 12-14 minutes or until the edges turn a light golden brown.
Step 8
Remove the cookie sheet from the oven and place it on a wire rack. Allow them to cool to room temperature. If you skip this step, the cookies are likely to fall apart.
