Step 1

Place the oil, lime zest and juice, garlic, honey, cream, ½ teaspoon salt and ¼ teaspoon ground pepper into an empty jar. Tighten the lid and shake vigorously until creamy and smooth. Chill in the refrigerator until you are ready to serve.

Step 2

Preheat the grill pan on a medium-high heat.

Step 3

Rub olive oil, salt and pepper into the chicken until coated evenly.

Step 4

Place the chicken on the grill pan and cook for 5 minutes on each side. Remove from the grill pan and allow to rest for 5 minutes before chopping it into bite-sized pieces.

Step 5

Start by spreading the romaine over a large platter or salad bowl. Arrange the rest of the toppings in lines on the lettuce bed so it resembles a rainbow.

Step 6

Just before serving, dress the salad with the creamy lime and garlic dressing.

Step 7

Serve the salad with freshly baked bread to mop up and extra dressing.
