Step 1
As with any chocolate chip cookie recipe, start by creaming together butter and sugar in the bowl of a stand mixer until light and fluffy. This process should take about 5 minutes. Don't rush this part! Next, add in the eggs and vanilla and beat well—another minute or so should do it.
Step 2
Then add in the remaining dry ingredients—flour, baking soda and salt. Beat until just combined. Overmixing cookie dough will cause the cookies to become tough—not crispy. The finishing touch for the cookie dough is stirring in the chocolate chips. You can use any chips you like—milk, dark, white—but semisweet is the traditional mix-in for chocolate chip cookies.
Step 3
Scoop tablespoons of dough onto baking sheets lined with parchment paper. You can use a spoon or cookie scoop for this job. Bake at 325°F for 11 to 14 minutes or until the edges have started to brown. Remove the cookies from the oven and allow them to cool fully on wire racks before storing them.
