You need two small bowls.In one bowl, add the tuna* (drained except for a very small amount of liquid). Add in the mayo and capers. *Or you can drain all of the liquid. Just add in a couple tsp more mayo then* Add a dash each of salt and pepper to taste, stir well; and set aside.
Step 2
To the other bowl, add the scooped out avocado. Add in a dash each of salt and pepper; also the lemon juice if using.Mash together and set aside.
Step 3
To make the sandwiches:Spread a layer of the mashed avocado on your choice of bread - lightly toasted or not.Top with some of the tuna/avocado mixture, and spread over the mashed avocado. Top with your choice of sliced cheese, tomato, etc. before serving.
Step 4
*If you’d like, you can put the tuna on the bottom first, then layer the mashed avocado on top. Whatever your preference is*
