Step 1
Make Marinated chicken: Combine all ingredients in a bowl. Stir until well combined. Set aside for 10 to 15 minutes.

Meanwhile make Sauce: Place all ingredients with 1 cup cold water in a small bowl. Stir until combined.
Step 3
Heat a wok or large frying pan over high heat. Add 2 teaspoons oil. Swirl to coat. Add onion and carrot. Stir-fry for 2 minutes or until lightly charred and just tender. Transfer to a large bowl. Add 2 teaspoons remaining oil to wok. Add broccoli stems and snow peas. Stir-fry for 2 minutes or until lightly charred and just tender. Transfer to onion mixture. Add water chestnuts to wok. Stir-fry for 1 minute. Transfer to bowl.
Step 4
Add 2 teaspoons remaining oil to wok. Add half the chicken mixture, spreading into a single layer. Cook, without stirring, for 1 minute. Stir-fry for 1 minute or until well browned and cooked through. Transfer to bowl. Repeat with remaining oil and chicken.
Step 5
Return chicken and vegetables to wok with sauce and broccoli leaves. Stir-fry for 2 to 3 minutes or until leaves have just wilted and sauce has thickened. Add bean sprouts. Toss. Sprinkle with chilli. Serve with steamed rice.
