Super Simple Pimiento Cheese

cream cheese, softened

mayonnaise

sharp white Cheddar cheese, shredded (about 2 cups)

(4-oz.) jar diced pimientos, drained

Kosher salt

black pepper

Beat together cream cheese and mayonnaise with an electric mixer at medium speed until thoroughly combined. Add cheddar cheese, and beat until combined.


Stir in the pimientos by hand. Sprinkle with salt and pepper to taste. Cover and chill up to 1 week.
