Step 1
Combine vinegar, marmalade, orange juice, garlic, honey and oil in a large shallow glass or ceramic dish. Add chicken. Season with salt and pepper. Turn to coat. Refrigerate for 2 hours, if time permits.

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with sides with baking paper.
Step 3
Place chicken on prepared tray. Bake for 50 minutes, turning chicken every 10 minutes, until chicken is browned and cooked through.
Step 4
Sprinkle chicken with oregano. Serve with salad leaves and bread.
