Step 1
Place a bowl onto mixing bowl lid and weigh rice into it. Cover with water and set aside to soak for 30 minutes.
Step 2
Drain soaked rice using simmering basket and rinse until water runs clear. Place rice into mixing bowl, add 420g water and start Rice Cooker .
Step 3
Add vinegar, sugar and salt and stir to combine. Transfer to a shallow bowl (see Tips) and set aside to cool, gently turning with a wooden spoon every 5 minutes or so until ready to use.
