Step 1
Prepare the ingredients by chopping garlic, dicing onion, peeling and slicing carrots, and chopping celery.
Step 2
In a large soup pot, sauté the onion, carrots, garlic, and celery in the olive oil for about 5 minutes, or until the onions are soft.
Step 3
Into the pot, put tomato sauce, diced tomatoes (with juices), vegetable broth, basil, and oregano. Stir the soup until it is combined, then allow it to simmer for a few minutes.
Step 4
Add the frozen spinach to the soup once it has simmered (no need to thaw first). Until the spinach has melted and heated through, stir it into the hot soup.
Step 5
Stir the spinach into the soup thoroughly and season with salt if necessary.
Step 6
Using dicer, dice up the Swiss cheese. Ladle the hot soup over the cubes and a few cubes of cheese. I hope you enjoy it!
