Cut bell pepper into slices and store in separate container.

Add pork, bell pepper, and drained pineapple to sheet pan. Spray pork with non-stick spray to help it crisp up.
Step 5
Bake at 400 degrees for 15-18 minutes. Add sauce to pork during last 5 minutes of baking. Garnish with chopped green onion.
Step 6
Cook rice according to package directions and serve with pork.
