Step 1
Brush the puff pastry with a little water and sprinkle with sugar. Fold it into an accordion shape. Starting from opposite edges, fold both sides three times until they meet in the center. Close the dough like a book with the interior folds still intact. Transfer to the freezer to set for 15 minutes.
Step 2
Then remove and cut with a sharp knife to obtain 1.5 cm wide strips. Roll them out slightly using a rolling pin and pinch the base for the shape of a small fan (hence the Italian name ‘ ventagli’).
Step 3
Place the ventagli spaced apart on a baking sheet lined with baking parchment. Bake at 400°F in a ventilated oven for about ten minutes. Store in a tin box for 5-6 days in a cool place.
