Step 1

Preheat the oven to 400°F. Grease and line a 9-inch square baking pan with parchment paper. Measure and prep all ingredients.

Step 2

In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, cinnamon (or pumpkin pie spice) and salt until well combined.

Step 3

In a separate bowl, whisk together the melted butter, vegetable oil, brown sugar, eggs, buttermilk and mashed sweet potatoes.

Step 4

Add the buttermilk mixture to the flour mixture and mix with a rubber spatula until just combined.

Step 5

Transfer the batter to the prepared baking pan.

Step 6

Bake for 18-20 minutes until golden brown on top and when a toothpick inserted into the center comes out clean.

Step 7

Serve plain or slathered with butter and drizzled with honey. Enjoy!
