Step 1
Heat skillet over medium heat.
Step 2
Combine all ingredients in a medium-sized bowl and stir until large lumps disappear. Do not overmix. Let batter sit for 2 minutes to thicken. If the batter is too thin, add a little more pancake mix. If too thick, add more water.
Step 3
Lightly grease skillet with solid shortening.
Step 4
Pour slightly less than ¼ cup batter for each pancake onto skillet.
Step 5
Flip when pancakes bubble and bottoms are golden.
Step 6
