Step 1
Preheat the oven to 175C/350F.
Step 2
Peel and grate the sweet potato.
Step 3
Mix all ingredients into a bowl.
Step 4
Using your hands, take around 2 tablespoons of the mixture, shape it into a ball then flatten it. Arrange nicely on a baking sheet.
Step 5
Bake for around 15-20 minutes or until golden and crisp. Flip once if needed to get a uniform crisp.Make sure to check on the sweet potato rostis regularly as they can easily burn around the edges.
