1 In a large pot, combine the sweet potatoes and enough lightly salted water to cover

2 Bring to a boil, then reduce the heat and cook until just tender, about 10 minutes

3 Drain and allow the potatoes to cool to room temperature, then transfer to a large bowl

4 In a small bowl, whisk together the oil, maple syrup, orange juice, vinegar, ginger, nutmeg and the 1/4 teaspoon of salt

5 Add the scallions, parsley, pecans and raisins to the sweet potatoes and toss to combine
