Step 1
Pour olive oil and diced onion in inner pot of Instant Pot.
Step 2
Set Instant Pot to its sauté setting and cook onion until translucent.
Step 3
While the onions are heating up, peel and cut sweet potatoes into small bite-sized pieces.
Step 4
Add sweet potatoes pieces into inner pot and saute for about 4-5 minutes. Season with salt and pepper and then turn off the sauté function.
Step 5
Add vegetable broth to onion and sweet potato mix. Top off with Brussels sprouts.
Step 6
Close the lid to the Instant Pot and set on manual pressure high for 3 minutes.
Step 7
Once time is up, allow for a QPR.
Step 8
Serve with a drizzle of honey on top. Add more salt and pepper if desired.
