Add frozen sweetcorn to a bowl and cover with boiling water from the kettle. Leave to soak for five minutes.

Drain the water then add the flour and egg to the bowl and mix to combine.

Heat oil in a frying pan on medium-high heat and once hot, spoon the sweetcorn batter into the pan creating small fritters.

Fry for 2 minutes before flipping. Press down on the fritter with the back of your spatula so it flattens a little more.

Cook for 2 minutes more, then transfer to the plate and start again with the remaining batter,

Leave to cool completely before serving to baby.
