Taco Salad for a Large Crowd

beef

(10 ounces) nacho-flavored tortilla chips, coarsely crushed

grape tomatoes, halved

kidney

(2-1/4 ounces each) sliced ripe olives, drained

cheddar cheese

sweet onion, chopped

(4 ounces each) chopped green chiles

Thousand Island salad dressing

salsa

sugar

I used Ortega Taco Sauce for the dressing - comes in flavors - hot, mild, original.

Instead of kidney beans,  I like using chili beans.  I also have subbed meatless meat.  No one can tell the difference.

I made this for a backyard BBQ. It was great! I did use ground turkey to lighten it up a bit and it was really good. I did halve the recipe and it was fine. I am definitely making this again. It a nice change from coleslaw and potato salad. Thank you for sharing!

This is a solid recipe, and even the kids liked it! I did omit the sugar--it's really not necessary with all the sugar that's in the thousand island dressing. I subbed fritos for doritos, as I prefer those. You can really customize this recipe. I did also use an additional head of lettuce, because the ones at my store were small, and I'm really glad I did.

Made exactly as recipe is written - like you should if you are going to rate the recipe. Turned out great. Everyone loved it - especially the dressing.  Adding the salsa and taco seasoning to the thousand island dressing gave it a Mexican flavor. Can't imagine using Catalina or French on Taco salad as others did - not the right flavor.

This by far is my favorite taco salad recipe!  I couldn't find it in my mountain of cookbooks, so I gave up and came online!   I like the combo of thousand island and salsa.  So happy I found it, I couldn't remember the exact dressing ingredients.

We thought the dressing was too sweet; leave out the sugar.  If I were to make this again I would let people add their own dressing of their.  It seemed to goopy to me and once you add the dressing you can't really save any leftovers.

To those of us who grew up in the '60's and '70's when there were few Mexican restaurants around - something like Catalina dressing or Ott's  Famous Dressing was commonly used.  We grew up with it so of course we like it.  Now I just use plenty of a good homemade salsa  Bottled Thousand Island has too much sugar and calories for my liking.  That said, the salad ingredients are great so I give it four stars.

I love this recipe !!!! I have several different versions, originally called for Russian dressing !  Fritos, black beans, with meat or w/o doesn't matter , it's always a crowd favorite !!  I've even made it with Rotel dip as the dressing & fresh avocado added .  I'm trying this version ASAP !  Can't wait !!!  Ten stars !

I made this recipe exactly as specified, except that I halved everything.  It was good, but next time I would omit the beans or substitute something else for them - they didn't seem to go with the salad.  (Maybe use corn instead?) I had leftovers, and it did get very soggy - if you expect to have leftovers, you might want to serve tortilla chips or dressing separately.

I have used this recipe for many years.  My family's favorite dressing is Green Goddess.  I like to leave the dressing off so everyone can add as much as  they like. (and the kind they like...just put several out for their selection)

I got this same recipe from the mother of one of my college class mates in 1977 and have enjoyed it ever since.

We loved this recipe. I have been on the hunt for the perfect taco salad and here it is !I left out the sugar and switched the onions for green onions and didn't add the chilies as my salsa is pretty spicy.   Thanks for sharing !!  On my keepers list !

What a Wonderful Salad. It surely surpasses any salad that I have made in the past. In fact I need more stars to fill in cause 5 is not enough. Plain and simple Easy and cheap and so full of flavor. Boot it up or go light on the peppers like I did . I used Plain old Green. But this recipe is so much more than Peppers. Its a Boat load of yumminess that I highly recommend for Entertaining, Pot Luck or Just Because .. My family loves this salad and we are so GLAD to find it! ...only thing I changed: I usually use ground turkey and leave out the 1/3 cup sugar...the thousand island usually has enough.  I really love this- especially for summer...anytime, really! Try it...guarantee you will add it to your repertoire!

Made as directed, including the salad dressing with 1000 Island. Made a HUGE batch, plenty for a large potluck or picnic dish. Solid recipe, tasty and can be adjusted as needed (different flavors of chips, pinto or black beans instead of kidney, switch kinds of cheese, etc.) Would make again and experiment a bit more.

My new "go-to" taco salad recipe!  It is delicious!  No need for the extra sugar as the thousand island dressing adds just the right amount of sweetness.

Appreciate this large size recipe. We love taco salads. For our family (2 of us)  I use about 1/3 pound of ground beef browned with 1/2 packet taco seasonig. My husbnd loves the dressing so I make close to a cup (for family size.)  Instead of thousand island dressing I start with 1/3 cup lofat sour cream and keep adding salsa, either homemade or store-bought, until it is the tang we like.  I don't add any sugar. Romaine lettuce heads work well too - chop into bite size, rinse, spin dry, refrigerate before making salad for crispest lettuce. I  add some chopped onions but might rethink that for a potluck. Left-over taco salad with chips does have soggy chips - we try not to have left-overs. I also add Mexican 4-cheese to the salad before tossing.

I have made this for years and my family loves it!  I use no salsa , sugar or 1,000 island dressing. Right before I serve it, I add Catalina or French dressing.
