Step 1
Soak 1 cup of tapioca pearl in regular water for 1 hour. Make sure the pearl submerge under water, then discard the water
Step 2
Over medium flame cook the coconut milk and the cardamom pods in a pot.
Step 3
Once the milk comes to a boil add the tapioca pearls, stir and keep it over medium flame for a few minutes until the tapioca is soft. Add salt, sugar, whole corn kernels, raisins and condensed milk. Mix until they are well combined.
Step 4
When they are well combined and if it thickened up you can add 1/2 cup water but I like it thick (it supposed to be thick)
Step 5
Let it come to a boil just one more time and turn the flame off!
Step 6
Your tasty tapioca pudding is ready to be served!
