This bake is full of early morning favorites, like eggs, cheese, potatoes, and bacon, making it the perfect one-dish meal. And you&rsquo;ll love the fact that even more Cheddar cheese is added on top for a rich and gooey bite. We love how easy this recipe is to prepare. With just a handful of simple ingredients you probably already have on hand, you can bake this layered bake in two easy steps, using just one baking dish. First, whisk together eggs, cheese, milk, and seasonings in a large bowl. Then arrange the Tater Tots evenly in a lightly greased dish. Tater Tot Breakfast Casserole

eggs

Monterey Jack cheese, shredded (about 1 cup)

milk

table salt

black pepper

Tater Tots

sharp Cheddar cheese, shredded (about 1 cup)

bacon

Preheat oven to 350&deg;F. Whisk together eggs, Monterey Jack cheese, milk, salt, and pepper in a large bowl. Arrange Tater Tots in an even layer in a lightly greased (with cooking spray) 13- x 9-inch baking dish. Pour egg mixture evenly over Tater Tots. Top evenly with Cheddar cheese.


Bake in preheated oven until set and cheese is golden brown, 40 to 45 minutes. Let stand 10 minutes. Sprinkle with crumbled bacon.


First mad this at Christmas and repeated it almost every Saturday since.  My family loves this easy yummy breakfast.  Can be halved easily for a smaller crowd.
