Step 1
Preheat the oven to 350°F (about 177°C). Brush a 9x13-inch (23x33 cm) casserole dish with Country Crock® Original Spread. Line the bottom with tater tots.
Step 2
Heat a large skillet to medium heat and add 1 tbsp (15 ml) of Country Crock. Add the sausage and cook, breaking the sausage up with a spoon, until cooked through, about 5 minutes.
Step 3
Reserve about ¼ cup (60ml) of diced peppers for topping, then add onion and bell peppers to the skillet and cook, stirring occasionally, until veggies are softened, about 6-8 minutes. Let cool slightly then sprinkle over the tater tots. Sprinkle half the grated Cheddar cheese.
Step 4
In a large bowl, whisk together eggs, milk, melted Country Crock, salt, and pepper. Pour over the casserole dish. Sprinkle the dish with Mozzarella and the remaining Cheddar cheese. Top with the remaining diced peppers.
Step 5
Place in a preheated oven and bake until set in the middle, about 45-50 minutes. Let stand for 5-10 minutes before serving. Garnish with green onions and enjoy!
