Step 1

Start by making the teriyaki sauce. Add the cornflour to the water and mix well. Pour it into a saucepan then add the soy sauce, soft brown sugar, mirin, garlic, and ginger.

Step 2

Cook over a medium to high heat, whilst stirring often, until the sauce thickens. Take it off the heat and leave to cool slightly.

Step 3

Take the skin off the salmon, then cut it into bite sized pieces and add it into a mixing bowl.

Step 4

Pour half of the teriyaki sauce over the salmon and stir well to coat.

Step 5

Skewer the salmon, followed by a piece of spring onion, alternating until you have 4 complete skewers.

Step 6

Heat some oil in a large frying pan over a medium to high heat. Cook the salmon skewers for a few minutes on each side, until cooked through. Brush over some of the remaining teriyaki sauce.

Step 7

Serve the skewers with rice, and vegetables then finish by sprinkling over some sliced spring onions and sesame seeds. Add more teriyaki sauce if you like. Enjoy.
