Tex-Mex Summer Squash Casserole

medium yellow summer squash, sliced (about 10 cups)

cheddar cheese, divided

onion,

(4 ounces) chopped green chiles

(4 ounces) diced jalapeno peppers, drained

all-purpose flour

salt

salsa

green onions, sliced

red onion

I halved the recipe and used fresh jalapeno instead of canned. I only used 1 tsp flour because I try to keep calories to a minimum. Delicious. Next time I will cut down on the baking time to 20 minutes to keep the squash crisp tender before putting on the salsa and cheese. This is one of those recipes that can be adjusted suit individual tastes. Adding sausage or chicken would make this a very nice main dish.

I've made this recipe several times and everyone who tastes it wants the recipe.  I added 1/2 browned sausage and 1 can of diced tomatoes with green chiles, drained, to the recipe which made it a complete meal.  I've also used a combination of yellow squash and zucchini.  It's hard to go wrong with this recipe.

I read some reviews indicating that it's "watery".  This is what I did to eliminate that problem.  I made only a half-recipe, but used the full amount of flour instead of reducing it by half.  The consistency was excellent!  My family really liked this.  A change I'll try next time is to reduce the amount of jalapeños.

I was so excited to try this after reading the reviews, but for some reason, my hubby and I didn't like it.  It was kinda mushy, and the flavors just seemed to mesh together-no layers of flavor.

This is an amazing recipe. Sensational Tex-Mex taste (although I did use only 2  oz. of jalapeno pepper since some family members don't care for too much spice--it seemed to be just right for everyone's taste). Despite the addition of the flour, the final product was watery but I was able to drain most of it off. Terrific recipe!!

This is also the perfect one dish meal by using a deep 9x13 baking dish and adding about 4 cups of shredded chicken or about 11/2 lbs of seasoned cooked and crumbled ground beef. Also I add 1 regular sized can of olives halved the speedy way by placing them on an inverted plastic container lid then topping them with another lid of the same size and running a knife between them. I fire roast my green chilies on the stove top and add probably more then the equivalent of a 4 oz can of them chopped and add some in the mix and on top, the more the better. I sub the jalapenos for 3 or 4 diced fresh Serrano peppers and for seasoning I add about 1 Tb of my own blend of taco seasoning mix. This makes enough for the 2 of us to have left overs the next night but certainly nowhere near 10 servings.

I would give this a 10 if I could!  When this issue came and I saw this recipe, I *told* my squash plants to hurry up and produce because I wanted to try this recipe.  LOL     Anyone who loves summer squash, green chilies and cheese will definitely love this casserole. I left out the  jalpeno, just because I didn't have it; next time I will put it in.  I will definitely be making this again and again this summer and following summers.

I used zucchini because that is what I had.  I seeded the squash as I usually do and that cut down on the "watery" aspect.  Delicious and easy to make!  Good idea about turning it into soup...that's something I would do!

Tried this recipe. Did not put all the peppers or hot spices because my husband has to stay away from spicy food.  Just used the squash, flour, salsa, and I used mozzarella and cheddar shredded cheese.  Was delicious and a quick fix meal.

This recipe does a good job of balancing the freshness of the summer squash with the brightness of the spices of the chiles and pepper.  I agree with other reviewers that the casserole remained slightly watery; however, the end result is a really flavorful dish.

This was tasty and very easy to prepare. I deviated a bit from the recipe in that I did not add the jalape?os nor the red onions. Based on the other reviews concerning the wateriness, I also seeded the squash and the resulting dish was not watery. I will keep this in my rotation of summer squash recipes.

The only reason I'm giving this recipe 4 stars as oppose to 5 is because it didn't reheat well.  I loved this side dish when I made it, but when I packed the leftovers for lunch the next day, it took on some interesting flavors.  Definitely a nice change up for summer squash though!  Never thought I would want spicy squash, but it was surprisingly good!

Wonderful!  I seeded the squash and left out the jalapenos, as I added jalapeno stuffed sausage to make it a complete meal.  It was somewhat watery, but not too bad.  We ate it cold for lunch the next day.  It tasted even better cold, and also had thickened up.  We enjoyed this dish!

This was so good!  Pretty healthy too.  I served this as a side with ribs and cornbread but it could have easily been a main dish.    I would make this again, especially since it was so easy. Next time I might wrap it in foil and cook of the grill so I wouldn't need the oven.

Delicious!! Not too spicy! Brought it to a family dinner and even those who don't like spicy foods like enough to have seconds. Had a bit leftover so  I turned the leftovers into soup.  Added a bit of stock and the leftover casserole; blended until smooth.

I mixed in crushed saltine crackers and put some on top. It was really good.

This is definitely a  keeper  maybe a little less jalapenos cause already have the green chilis    But a 10 if I could  I will purchase summer squash in the winter just to complete my summer hankering in the winter

This is a great Tex-Mex dish that is simple to make and a general crowd pleaser.  I also used fresh jalapeno like one reviewer mentioned.  I prefer my veggies crispier, so I also cut back on the cooking time.

melt in your mouth. Easy to fix and this makes a great side dish.
