Step 1
Combine chicken mince, garlic, ginger, lemongrass, mint, lime rind, soy sauce and breadcrumbs in a bowl. Season with salt and pepper. Using wet hands, shape level tablespoons of mixture into small patties. Place on a plate.

Heat oil in a large frying pan over medium heat. Cook patties, in batches, for 4 to 5 minutes, turning, or until golden and cooked through. Drain on paper towel-lined plate. Set aside to cool.
Step 3
Combine sweet chilli sauce and lime juice in a bowl.
Step 4
Place a patty on each lettuce leaf. Drizzle with a small amount of dressing. Serve with lime wedges.
