Step 1
Filet the chicken or pound out flat. I like to filet them so they cook faster.
Step 2
Place the chicken on a plate. Spray one side with non-stick spray.
Step 3
Spoon the homemade blackened seasoning over the chicken and spread around. I use about ½ tablespoon per piece of chicken, but you decide. The more you use the spicier it will be and the less you use the milder it will be.
Step 4
Flip the chicken over and do the exact same to that side.
Step 5
Heat up a cast iron skillet so it is really hot. I personally love using this cast iron griddle that I can place right on top of my stove or on top of my grill.
Step 6
Place the chicken on the hot cast iron pan and let it cook for 5-6 minutes. Time it and don’t move the chicken, so it can get that beautiful blackened crust on it.
Step 7
Flip and cook another 5-6 minutes until done.
Step 8
Remove and allow it to cool for a few minutes and you will have flavor packed blackened chicken that tastes amazing!
