Step 1
In a mixing bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.

Make a well in the center of the dry mixture and add egg yolks, oil, and milk. Mix just until all the ingredients are moistened.

Beat the egg whites until stiff (this takes about 3-4 minutes), then fold into the batter.
