Step 1

Mix all the flours with the xanthan gum in a large bowl. Store in a large freezer ziplock bag and keep in the freezer. I like to make large batches of this recipe and store my bags in the freezer so I can just pull some out when I want to make this pizza quickly.

Step 2

Preheat oven to 425 degrees Fahrenheit. Prepare pizza pan by brushing on a little olive oil.  The size of your pan will depend on how thin you would like your crust (I like to use these pans to make two 12" thin crust pizzas).

Step 3

In a large mixing bowl, whisk together flour blend, baking powder, herbs and salt.  Pour in sparkling water, honey, and olive oil. Stir until just combined and the flour is completely mixed in.

Step 4

Pour the dough onto your pizza pans and using a spatula, spread the dough around to cover the entire pan evenly.

Step 5

Pre-bake the crust for 15-20 minutes, until slightly golden (length of time depends on whether you are making a thin or thick crust pizza).

Step 6

Remove pizza crust from oven and let cool slightly.  Top pre-baked pizza crust with sauce and toppings of choice.

Step 7

Return to the oven and continue baking for 10 minutes or until the toppings are bubbly and cheese is turning golden brown.

Step 8

Remove from oven transfer to a cutting board to cut and serve. If you leave the pizza on the pan it will turn soft, so make sure to remove it promptly to either a wire cooling rack or cutting board to serve.
