Step 1

Grease a large pot with a little oil then add the onions and begin to cook over medium heat

Step 2

Let them cook for about 10 minutes or so, until they caramelize

Step 3

Add in garlic and mix and let it cook for another 10 minutes or so and lower the heat as it cooks

Step 4

Add in the red wine to deglaze the bottom of the pan (you may need more than 1/2 cup)

Step 5

Next add in broth and herbs you are using and bring to a boil then simmer and cook for another 30 minutes or so until soup thickens

Step 6

Spoon the soup into 2 small ramekins and add a slice of bread to each followed by cheese and broil in oven for a couple minutes or until the cheese boils

Step 7

Enjoy immediately!
