Step 1
Place slices of banana in a jar, top with sherry. Let infuse for 72 hours.
Step 2
Strain out banana slices, throw away.
Step 3
Combine all ingredients in a mixing glass with ice. Stir to chill.
Step 4
Strain out into coupe.
Step 5
Garnish with another banana slice, topped with sugar and bruleed.
