Step 1
In a small bowl, beat eggs with a fork until combined. Add a small splash of water and black pepper and mix again.

In a non-stick frying pan, heat oil over a medium heat. Pour in egg mixture, ensuring that it covers the entire pan base. Leave for 1 minute, use a spatula to gently lift the egg away from the edges and allow the uncooked egg to flow to edge of the pan - you may need to tilt your pan to encourage this.
Step 3
When top surface of the mixture is getting small bubbles around the outside and looking cooked, arrange the jalapenos and spinach onto one half of the omelette and top with cheese.
Step 4
Fold the empty side of the omelette over top. Cook omelette for another minute. Flip or slide onto plate and serve immediately.
