Step 1

2 cups of rice in the instant pot along with water.

Step 2

Pour both packets of seasoning over the rice

Step 3

On top place chicken, corn, Rotel, Black Beans, Jalapeno's, and Peppers.

Step 4

Do not stir.

Step 5

Place on manual LOW PRESSURE for 12 minutes.

Step 6

Do a quick release.

Step 7

Stir in Cheese.

Step 8

Use a gallon size freezer bag

Step 9

Add Chicken, tomatoes, beans, corn, seasonings, and peppers to the bag.

Step 10

Freeze for up to 6 months

Step 11

Remove from freezer bag and place in the instant pot with 1 cup of water.

Step 12

Cook on high pressure for 12 minutes with a natural release.

Step 13

You can serve with pre-frozen Rice

Or you can add 2 cups of uncooked rice to the pot

Step 15

Cook on LOW Pressure for 12 minutes

Step 16

Do a quick release.

Step 17

Stir in cheese.
