Step 1
Place the almonds, pitted dates and cacao nibs into the Thermomix bowl. Pulse for 5-10 seconds on Turbo speed (or until finely chopped).
Step 2
Add the remaining ingredients and pulse again on Turbo speed for a further 5-10 seconds or until the mixture can easily be rolled into firm balls (see notes).
Step 3
Roll the mixture into balls and place into an airtight container in the fridge for up to 1 week or in the freezer for up to 2 months.
